Keto Peppermint Brownies

Serve these warm and moist as is or top with with Keto Whipped cream or a scoop of coconut ice cream.
¾ cup blanched almond flour
½ cup Swerve confectioners style sweetener
¼ cup raw cacao powder
1 teaspoon of baking powder
¼ teaspoon of salt
3 oz of cream cheese, softened
¼ cup (½ stick) unsalted butter, softened
2 large eggs, beaten
1 teaspoon peppermint extract or 10 drops of peppermint essential oil
⅓ cup chocolate chips
Confectioner’s style Swerve sweetener, for dusting (optional)
Preheat the oven to 325˚. Spray an 8-inch square baking pan with nonstick cooking spray or line with parchment paper.
In a medium-sized mixing bowl, combine the dry ingredients and whisk to blend.
Add the cream cheese, melted butter, eggs, and peppermint extract or oil. Mix until well blended. Fold in the chocolate chips.
Pour the batter evenly into the prepared pan and smooth the top. Bake for 35-40 minutes, until a toothpick inserted in the center comes out clean. Let cool.
Dust with sweetener, if desired, then cut in 2-inch squares.
